Korean Café & Dessert Culture

The Korean dessert you meet in a Seoul café is usually newer than it looks, and sometimes not Korean at all. Butter tteok is the clean case — a canelé rebuilt with glutinous rice flour in Nantong, China, renamed on its way into Korean bakeries, and now copied back out of Seoul. The cafés serving it turn over just as fast, which is why cafe hopping in Seongsu collects rooms rather than roasts.
